shriekWhen Shriek said he had layers like an onion, Donkey told him to be a like a parfait instead. It has layers and everyone loves them. I LOVE parfaits Today I’m going to share two of favorites that aren’t the traditional yogurt and ice cream parfaits. Like Shriek, they are a little different.
These are great for a party where there will be a lot of ‘roaming.’ A guest can grab one and mingle. Both recipes makes 12 parfaits and I’ve done them a day ahead and they were good to go on party day.

Bean Dip Parfaits
I use plastic shot glasses that I get at the dollar store so the guest simple throws them away when they are done (easy clean up).
1 cup refried beans
½ cup salsa
2 cups sour cream
¼ cup chopped fresh cilantro
2 tsp. minced lime zest
1 tsp. each ground cumin and coriander
Kosher salt to taste
2 avocados, pitted and peeled
2 Tbsp. fresh lime juice
2 tsp. minced garlic

½ cup shredded Cheddar
1 cup quartered graped tomatoes
¼ cup each sliced scallions and black olives

For the parfaits, combine beans and salsa in a bowl; set aside. Whisk together sour cream, cilantro, zest, cumin, and coriander in a bowl until combined; season with salt and set aside. Mash avocados, lime juice, and garlic until
no large chunks remain; season with salt and set aside.
Transfer bean, sour-cream, and avocado mixtures into separate resealable plastic bags. Snip off a corner of each bag. Squeeze some of each mixture into 12 two-ounce shot glasses, starting with the bean mixture and ending with the avocado mixture.

For the toppings, sprinkle Cheddar, tomatoes, scallions, and olives on each parfait. Cover and refrigerate parfaits at least 4 hours.

Serve with tortilla chips

For my second parfait, it makes a great ‘main’ dish to the Bean Dip Parfait. It’s a my spicy chicken pasta {it’s super easy because I start with Suddenly Salad :)}

Spicy Chicken Pasta Parfait
For Parfait
1 box Suddenly Salad Classic Pasta
1/3 cup sour cream
3 tbs water
1/2 teas chili powder
1 cup cherry tomato halves
1/2 cup green bell pepper strips
2 green onions, chopped
1 cup shredded cooked chicken (I cook my chicken as if I was going to use it for tacos)
1/2 cup shredded Cheddar cheese
Salsa (any variety)

For Toppings,
Tortilla chips

For Parfaits
Cook pasta mix per the direction. Drain pasta; rinse in cold water.
Stir together seasoning mix from pasta, sour cream, water and chili powder
Place a layer of the pasta in your pint jar
Then a layer of bell pepper and onion
Then the chicken
Then the sour cream mixture
Then the tomatoes
Top with the cheese.
Before serving sprinkle with crushed tortilla chips.
